Hide Yamamoto (02-05 Marina Bay Sands, 10 Bayfront Avenue, Singapore) — Named after its chef-owner Hidemasa Yamamoto, this 128-seater, multi-concept space offers the chance to sample the culinary creations of the chef who has had the honor of preparing the food at the inauguration parties of three US presidents — Reagan, Bush and Clinton. There are four menus for you to choose from — sushi, teppanyaki, robata and ramen — and you can decide how you’d like to have your meal for the night.
Maybe you feel like tasting the freshest seafood flown in daily from Tokyo’s famous Tsukiji market at the sushi bar or getting entertained by the chefs as they expertly cut and cook food at the Teppan tables. Expect the highest quality Japanese vegetables, wagyu beef and homemade ramen noodles made from 110 year-old ramen recipes at the noodle bar, not to mention an extensive list of original signature cocktails, sake and shochu at the sake bar.
With multiple culinary accolades and awards under his belt, Yamamoto has graced the kitchens of the legendary Roger Verge in Province, Chez Nouz Hama in San Francisco and Jockey Club at Washington’s Ritz-Carlton Hotel.
